Maa Laddu is made with roasted gram flour, also known as besan or chickpea flour. The flour is roasted in ghee until it turns golden brown and gives off a nutty aroma. Jaggery, a traditional unrefined sugar made from sugarcane or palm sap, is melted with some water to form a syrup. The roasted gram flour is then mixed with the jaggery syrup, along with ghee and cardamom powder. The mixture is shaped into small balls or laddus by rolling it between the palms of the hands. The laddus are then left to cool and harden, after which they can be stored in an airtight container. Maa Laddu has a crumbly texture and a sweet, nutty flavor. It is a popular sweet in Tamil Nadu and is often served during festivals and special occasions. Maa Laddu is a good source of protein and is considered a healthy sweet option.
